All teas come from the same plant. How the leaves are processed will determine their final classification as black, green and oolong teas. The main difference between the many tea varieties is how much oxygen the leaves are allowed to absorb during processing. Much oxygen produces dark-colored black teas. Little oxygen results in green tea. Unprocessed leaves are called white tea.

Black Tea undergoes a full fermentation process composed of four basic steps - withering, rolling, fermenting and firing.

Oolong Tea is semi fermented. In between green and black.

TI KUAN YIN Iron Goddess of Mercy - Oolong Tea A distinctive light cup that has hints of orchid-like flavor. Excellent for quiet moments. Oolongs teas are best enjoyed when the leaves are briefly infused with hot water, which is then poured off. The tea is then reinfused and tea is poured to the lucky guests after about 1 minute. The leaves may be re-infused several times, with each resulting infusion yielding different liquor from the proceeding cup. Contains caffeine.

Pu-erh Ginger- Aged, organic Black Tea The zesty notes of orange and ginger complement the rich, smooth flavors of Pu-erh. Contains caffeine.

Roasted Mate - This plant grows in Argentina and is consumed throughout South America. More caffeine than coffee or tea. Rich in matteine which is recognized as a mild stimulant. A full bodied and smooth roasted character imparts a coffee-like toast flavor. Stimulating yet healthful with vitamin C, naturally occurring nutrients and antioxidants.

Roasted Mate Chai - with a mocha character and light spice.

Mocha Nut Mate- The mellow chicory-like character of our Brazilian toasted mate is a perfect platform for a favorite indulgence - chocolate! Add a bit of hazelnut and you have the perfect treat. Great straight up or enhanced with cream and sugar this mate chocolate hazelnut is sure to entice your taste buds. Please note that all Mate varieties contains caffeine; we would not suggest it as a nightcap.

Flavored and Scented Tea is created when the additional flavorings are mixed with the leaf as a final stage when the tea is packed. For an example, in Jasmine tea, whole jasmine blossoms are added to green and oolong tea. Fruit-flavored teas are generally made by combining a fruits essential oils with black tea.

Earl Grey - Black Tea Traditionally Earl Grey was a blend of Chinese and Indian teas scented with the oil from the bergamot fruit - an oddly shaped citrus fruit from Southern Italy. It is said that a British diplomat on a mission to China saved the life of a Mandarin and as a gift of gratitude was given the recipe for this flavored tea. This diplomat upon his return to Britain presented the tea to the Prime Minister of the day, Earl Grey. In any event it was the Prime Minister of England (1830-1834) Earl Grey who made this tea fashionable. Contains Caffeine.

Green Tea is often referred to as “unfermented” tea. The freshly picked leaves are allowed to dry, then are heat-treated to stop any fermentation (also referred to as oxidation).

China Gunpowder - Green Tea Green tea leaves so styled to protect their precious cargo of aromatic oils. A short steeping will release the sweet aromas and full-bodied flavor of this sought after and healthful tea. Gunpowder tea, as the name implies, is made up of leaves hand-rolled into tiny pellets. White Tea is produced on a very limited scale in China and India. It is the least processed of its many varieties. The new tea buds are plucked before they open and simply allowed to dry. The curled-up buds have a very silvery appearance and produce a pale and very delicate cup of tea.

Red Tea Rooibos, pronounced “Roy Boss” and colloquially known as Red Tea, is an herbal plant that grows in South Africa. A flavorful, caffeine-free alternative to tea for those seeking to eliminate caffeine intake. Rooibos, an African word of Dutch origin meaning “Red Bush”. A bush with fine needle-like leaves.
